Coconut macaroons – prepared warm

Ingredients for 1 servings:

  • 4 egg whites
  • 200 g sugar
  • 1 tsp honey
  • 150 g desiccated coconut
  • 50 g flour
  • 1 pack of lemon peel flavoring or lemon zest from 1 lemon
  • 1 pack of wafers

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Put the egg whites (you can also add a little egg yolk), sugar, honey and desiccated coconut into a saucepan and mix well. Stir over a low heat and remove from the heat. Sift the flour and stir it into the still warm mixture. Add the lemon flavoring or zest and mix in. Using teaspoons, place nut-sized heaps of dough onto wafers and place these on a baking tray lined with baking paper. Bake in a preheated oven on the middle shelf at 140°C (top/bottom heat) (gas mark 1) for approx. 20 minutes. Only bake until light yellow. They should still be a little soft to the touch before you remove them from the tray. Store in a freezer bag.
