Orange or lemon cookies

Ingredients for 2 servings:

  • 250 g butter
  • 200 g sugar
  • 1 pinch of salt
  • 6 egg yolks
  • 2 oranges or lemons, untreated, juice and zest
  • 500 g flour, type 405
  • 1 tsp baking powder
  • 200 g powdered sugar
  • 1 tbsp orange juice or lemon juice
  • 1 tbsp water, hot
  • Pistachios, halved, for garnishing
  • Egg yolk for brushing

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 2 hours 10 minutes

Cream the butter with the sugar, a pinch of salt, and the egg yolk until fluffy. Grate the zest and juice of two unwaxed oranges or lemons. Stir a little of the grated zest and 2 tablespoons of the juice into the foam. Reserve the rest of the zest and the remaining juice for the icing. Then mix the flour with the baking powder and stir into the mixture until a smooth dough forms. Chill the dough for 1 hour. Preheat the oven to 200°C (top/bottom heat). Roll out the cookie dough and cut out shapes with a cutter. Brush the edges with a little egg yolk and place the cookies on a baking sheet lined with baking paper. Bake for about 10 minutes, until golden yellow. For the icing, mix together the icing sugar, juice, and hot water and brush over the warm cookies. Decorate with some grated zest and pistachio halves.
