Ingredients for 1 servings:
- 250 g sweet potatoes, peeled
- 1 onion(s), approx. 90 g
- 1 clove(s) garlic
- 125 g minced beef
- 100 g cocktail tomatoes
- 200 ml meat broth
- 100 ml cream
- 1 tsp, sifted thyme, shredded
- Paprika powder, sweet or hot
- coriander
- cumin
- 1 pinch of cinnamon
- Salt and pepper, white
- 2 processed cheese slices (Cheddar), 50 g
- 1 tbsp, heaped margarine
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes
Peel the onion and garlic, and dice the sweet potato and cherry tomatoes. Heat the margarine in a saucepan, add the diced onion and garlic, and fry until golden brown. Then add the ground beef and fry. Add the diced sweet potato and fry briefly. Pour in the meat broth and cream, and stir in the spices and thyme. Cover the pan and simmer gently for 10 minutes. Once the sweet potato is tender, stir in the diced tomatoes and simmer for about 3 minutes. Tear the cheese slices into small pieces, add them, and stir until melted. Season the sweet potato stew to taste, adding more seasoning if necessary, and serve immediately.
