Bread casserole

Ingredients for 4 servings:

  • 250 g bread(s) (wheat bread)
  • 250 g bread(s) (rye bread)
  • 4 eggs, separated
  • 3 tbsp honey
  • ½ tsp vanilla (natural vanilla)
  • 1 lemon(s), grated peel
  • 1 pinch of salt
  • 500 g berries (e.g. currants, possibly frozen)
  • Butter for the mold
  • Breadcrumbs for the mold
  • Butter, flakes
  • Honey and cinnamon, to taste

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the bread, beat the egg yolks and honey until frothy. Mix with the remaining ingredients and the bread, then fold in the stiffly beaten egg whites. Pour the mixture into a greased, breadcrumb-lined dish. Sprinkle with butter. Bake at 200°C for about 45 minutes. Drizzle the hot casserole with honey and sprinkle with cinnamon.
