Quick summer penne in horseradish tomato sauce

Ingredients for 2 servings:

  • 250g penne
  • 1 can of tomatoes, pureed
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 red chili pepper(s)
  • 1 ½ tbsp horseradish, from the tube
  • 1 ½ tsp mint, dried
  • some salt
  • some pepper
  • some sugar
  • some olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cook the pasta in salted water until al dente. Finely dice the onion, garlic, and chili pepper. Toss everything in a little olive oil, sprinkle with a few pinches of salt and sugar, and sweat over low heat until translucent. Add the passata and simmer briefly. Finally, stir in the horseradish and mint. Drain the pasta (do not rinse!) and serve with the sauce.
