Ingredients for 4 servings:
- 700 g roast beef, well trimmed
- Sea salt, coarse
- Garlic, squeezed
- rosemary
- Thyme
- 1 pack of hay (meadow hay), natural
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 40 minutes; Total time approx. 2 hours 10 minutes
Alpine cuisine
Sear the roast beef briskly on all sides. Set aside and rub with salt and herbs. Immerse the hay in cold water. Place half of the hay in a roasting pan and press down lightly. Place the roast beef in the center, cover with the remaining wet hay, and press the hay firmly all around. Place the roasting pan in an oven preheated to 120-130°C and cook uncovered until the internal temperature reaches just under 57°C. This takes about 1.5 hours, or maybe a little longer.
