Ingredients for 4 servings:
- 500 g beef fillet(s)
- 3 tbsp butter
- Salt
- pepper
- 100 g onion(s)
- 150 g mushrooms
- 125 ml meat broth (instant)
- 125 ml sour cream
- 2 tsp mustard
- 2 tbsp crème fraîche
- 1 tbsp lemon juice
- 200 g gherkins
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Rinse the beef fillet, pat dry, and cut into thin strips. Melt 1 tablespoon of fat in a pan, fry the meat strips on all sides until light brown. Season, remove from the pan, and keep warm. Peel and dice the onions. Clean the mushrooms, brush them, and slice them. Heat the remaining fat in a pan. Sauté the diced onions and mushrooms. Pour in the meat broth and let it reduce slightly. Mix the cream with the mustard and pour into the sauce. Bring back to a boil. Then season with crème fraîche, lemon juice, salt, and pepper. Cut the gherkin into thin strips and add to the sauce along with the meat. Serve with spaetzle or parsley potatoes.
