Squid pan with peppers

Ingredients for 2 servings:

  • 1 kg squid(s), small or tubes, fresh or frozen
  • 2 bell peppers, red
  • 4 garlic cloves
  • 3 tbsp olive oil
  • 2 tbsp parsley, roughly chopped
  • 1 chili pepper(s)
  • Salt
  • Pepper, from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Simmer the squid in salted water for 5 minutes. Drain in a colander and let it drain well. Cut the tubes into wide strips; you can halve the squid or leave it as is—they’re not that big anyway. Cut the peppers into diamond shapes and the chili into thin strips. Slice the garlic into fairly fine slices. Heat oil in a deep pan and fry everything together for about 5 minutes, until the squid is lightly browned around the edges. Season and sprinkle with parsley. Serve immediately. Serve with white bread and a dry white wine.
