Clementine juice jam with soft apricots and vanilla bean

Ingredients for 3 servings:

  • 500 ml clementine(s), juice, with pulp
  • 50 g apricot(s), soft, dried
  • 250 g gelling sugar, 2:1
  • 1 vanilla pod(s)
  • 1 bag(s) of citric acid
  • 1 pinch of cinnamon

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Makes 3 glasses of 250 ml, 200 ml and 110 ml each

Pour the clementine juice (with pulp) into a saucepan. Add 250g of 2:1 gelling sugar and increase the heat to high. Finely chop 50g of dried soft apricots and add them to the pan. Scrape out the seeds and pod from one vanilla pod and add the seeds and pod to the pan. Let everything simmer for about 4-5 minutes, stirring in a good pinch of cinnamon and a sachet of citric acid for the last 2 minutes. Check for settling, remove the vanilla pod, and fill the mixture into twist-off jars and seal.
