Ingredients for 4 servings:
- 500 g tripe, pre-cooked, not soured
- 50 g bacon, diced
- 1 large onion(s), diced
- 2 tbsp, heaped capers
- 1 liter beef broth
- 1 bunch of parsley
- ½ bunch of dill
- 1 bay leaf
- 1 tsp black pepper, ground
- 2 tbsp apple cider vinegar
- n. B. Salt
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes
Dice the onions and bacon. Chop the dill and parsley. Fry the bacon in a deep pan, then sauté the onions and add the capers. Add the parsley, dill, bay leaves, and pepper to the broth. Add the tripe to the pan, sauté briefly, and pour the broth over it. Simmer everything for about 30 minutes. Finally, season to taste with the vinegar.
