Ingredients for 4 servings:
- 500 g lentils, red
- 1 egg(s)
- 5 tbsp flour
- 10 tbsp breadcrumbs
- 2 tsp smoked salt
- 1 tsp paprika powder
- 1 tsp turmeric powder
- 3 tbsp clarified butter
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Cook the lentils according to the package instructions. Drain and squeeze out any excess water as best as possible using a clean tea towel. Place the lentils in a bowl. If you prefer a smooth mixture, you can puree them with a hand blender at this point. Then add the egg, flour, and seasoning until a pliable mixture forms. Shape the mixture into schnitzels or nuggets and coat in breadcrumbs. Heat the clarified butter in a pan and fry the schnitzels well on both sides until they turn a nice golden brown and become crispy.
