Ingredients for 4 servings:
- 1 ½ kg asparagus, white
- 100 g breadcrumbs
- 100 g Parmesan
- 2 eggs
- 6 tbsp flour
- some oil
- salt and pepper

Wash and peel the asparagus, trim off the woody ends, and halve thicker stalks lengthwise if necessary. We make sure to get thinner stalks when buying and have them peeled beforehand. Finely grate the Parmesan cheese and mix it with the breadcrumbs. Crack the eggs into a small bowl and whisk them together. Season with salt and pepper to taste. Coat the asparagus first in flour, then in the egg, and finally in the breadcrumb mixture. Press the breading down lightly. Heat the oil in a large pan and fry the asparagus in batches for 6-8 minutes until crispy on all sides, then remove. It goes well as a side dish with pasta dishes or for a cozy barbecue evening. Asparagus fans can also enjoy it as a main course with some ham and a good bottle of white wine.
