Roasted green asparagus with Parmesan

Ingredients for 2 servings:

  • 500 g asparagus, green
  • 3 tbsp olive oil
  • Salt and pepper, black from the mill
  • some lemon juice
  • e.g. Parmesan, sliced

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Simple and quick to prepare, ideal side dish

Trim the green asparagus. You can snap off the lower ends; where the asparagus breaks, it’s no longer woody. Or you can peel the lower third a little and just trim off the ends. The latter wastes less of the beautiful asparagus. Heat the olive oil in a pan over medium heat. Place the asparagus spears in the oil. Don’t worry if not all of the spears are touching the bottom of the pan; over time, they will soften and all of them will be cooked on their own. Turn occasionally, but not too often, so the asparagus not only cooks but also gets a nice brown color. This takes about 15-20 minutes. Sprinkle the asparagus with lemon juice and season with salt and pepper. Toss again in the pan and arrange on a platter. Sprinkle with shaved Parmesan cheese.
