Chicken nuggets with almond breading

Ingredients for 4 servings:

  • 1 kg chicken breast fillet(s)
  • 100 ml oil, neutral, e.g. rapeseed oil
  • 100 g ground almonds
  • 300 g breadcrumbs
  • 4 tbsp Mexican spice mix

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

delicious and quick

Preheat the oven to 200°C. Line a baking sheet with parchment paper. Roughly dice the meat, season, and toss in the oil. Mix the ground almonds and breadcrumbs. Coat the meat loosely in the breading. Spread it on the baking sheet and bake at 200°C for 35-40 minutes.
