Bacon-wrapped green beans

Ingredients for 10 servings:

  • 750 g green beans
  • 50 g butter
  • 20 slices of bacon
  • 1 bunch parsley, flat
  • 1 tsp peppercorns
  • 2 shallots
  • Salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Wash and trim the beans, removing any strings if necessary. Cook the beans in salted water with the peppercorns (or ground pepper) until al dente. Rinse the beans in cold water and drain well. Finely chop the shallots and parsley and then sauté them in melted butter in a pan until translucent. Add the beans to the pan and toss to coat. Lay out the bacon slices flat, divide the cooked beans between the slices and wrap them up. If the bacon doesn’t stick on its own, use a toothpick to secure it. Return the rolls to the pan or grill and cook until the bacon is golden brown all over.
