Ingredients for 4 servings:

  • 100 g rice (wild rice)
  • Chicken broth
  • 75 g carrot(s)
  • 20 g walnuts
  • 75 g spring onions
  • 40 g raisins
  • 50 ml lemon juice
  • 20 ml olive oil
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

with carrots and raisins

Mix the lemon juice, olive oil, and spices to make a dressing. Rinse the rice and cook it in chicken broth for a maximum of 45 minutes. Grate the carrots into fine strips, slice the spring onions into thin rings, and chop the walnuts. Mix the cooled rice with the remaining ingredients and the dressing. Sprinkle the chopped walnuts on top just before serving, if desired; this will help retain their crispness.
