Ingredients for 4 servings:

  • 1,000 g potatoes, waxy
  • 20 g lard
  • 20 g clarified butter
  • 20 g goose fat
  • Salt

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

from raw potatoes

Peel and wash the potatoes, then cut them into not-too-thin slices or sticks. Heat the fat in a large pan, add the potatoes, sprinkle with a little salt, and cook uncovered for about 15 minutes, turning frequently. Then cook uncovered for another 15 minutes, turning occasionally. Tip: You might add 1 medium-sized diced onion to the potatoes.
