Yogurt potato pancakes with onions

Ingredients for 1 servings:

  • 1 ½ kg potatoes
  • 4 large onions
  • 250 g yogurt
  • 3 eggs
  • 2 tbsp lemon juice
  • 15 tbsp flour
  • 30 g salt
  • 1 tsp herbs de Provence
  • Rapeseed oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Finely grate the potatoes and onions. Mix in the eggs, salt, herbs, lemon juice, and yogurt thoroughly. Then stir in the flour a tablespoon at a time. Finally, fry in a pan until they form potato pancakes. Serve with applesauce or another side dish of your choice. This recipe makes about 25 potato pancakes.
