Redfish fillets in mustard sauce

Ingredients for 2 servings:

  • 400 g redfish fillet(s), also frozen
  • 1 bunch of spring onions, sliced
  • 2 tbsp shallot(s), chopped
  • 100 ml white wine
  • 200 ml cream
  • ¼ cup(s) vegetable broth
  • 2 tbsp mustard
  • Parsley
  • 1 lemon(s)

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Season the fish with salt and pepper. Place the fish in a baking dish on top of the shallots and spring onions. Pour in the wine (just enough to keep cool). Microwave for about 10-15 minutes in a 360-watt microwave + grill level 2 (top and bottom heat for about 20 minutes in an oven preheated to 200°C). Keep the fish warm, pour the liquid (stock) into a saucepan, add the cream, vegetable stock, and mustard, then reduce. Thicken with a little sauce thickener until the consistency is right. Pour the sauce over the fish in the baking dish and cook for about 5 minutes. Garnish with peeled lemon (thinly sliced) and parsley. It’s easy to make and tastes great. Also ideal for guests.
