Hearty whole-wheat pasta salad

Ingredients for 4 servings:

  • 150 g whole wheat pasta (spirals)
  • 1 medium-sized zucchini, approx. 300 g
  • 1 m.-large bell pepper(s), yellow
  • 1 m.-large onion(s), red
  • 200 g mini Roma tomatoes
  • 3 stalks of basil
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar, dark
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

easy and fast

Cook the whole-wheat spirals until al dente and drain. Meanwhile, dice the zucchini and bell peppers, finely slice the onion, and quarter the tomatoes. Roughly chop the basil. In a bowl, toss the vegetables with the olive oil, balsamic vinegar, and basil, and season generously with salt and pepper. Then stir in the still-warm pasta. Let it rest briefly, then season to taste with salt and balsamic vinegar, if desired.
