Ingredients for 6 servings:
- 250 g Kritharaki (rice-shaped noodles)
- 150 g cheese substitute (feta cheese, vegan)
- 60 g almonds
- 60 g olives, sliced
- ½ bunch of spring onions
- ½ bunch parsley, flat
- 8 dates
- 4 tbsp orange juice
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- ½ tsp cayenne pepper
- 1 garlic clove(s)
- salt and pepper

Roughly chop the vegan feta cheese, almonds, dates, and parsley, and slice the spring onions. Combine everything in a bowl along with the sliced olives. Prepare the pasta according to the package instructions. Once the pasta is cooked, drain and rinse briefly under running water. Add the pasta to the bowl and mix everything well. Mix the dressing ingredients and stir in. Let it simmer and season again with salt and pepper before serving.
