Asian carrot salad

Ingredients for 4 servings:

  • 2 large onions, red
  • 5 large garlic cloves
  • 1 kg carrot(s), grated
  • 2 large oranges, untreated
  • 1 tsp orange peel, untreated, grated
  • 4 tbsp ginger root, peeled and finely grated
  • 1 handful of coriander leaves, fresh
  • 1 dash of roasted sesame oil
  • 2 tbsp sesame seeds
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

delicious, light and a delight even for the most German palate

Sauté the finely diced onions and chopped garlic in a pan over medium heat with a little neutral oil for 3 minutes. Now add the grated carrots and sauté uncovered for 10 minutes, stirring occasionally, until softened. Deglaze with the orange zest and juice and remove from the heat. Stir in the ginger, finely chopped coriander, sesame oil, and sesame seeds. Season with salt and pepper. Serve with delicious whole-grain bread with nuts.
