Ingredients for 1 servings:
- 150 g sugar
- 2 lemon(s), zest and juice
- 240 g flour
- 2 tsp baking powder
- 1 tsp baking soda
- 2 tbsp poppy seeds
- 1 pinch of salt
- 115 g butter
- 170 g yogurt
- 2 eggs
- 1 tsp vanilla extract
- 50 g powdered sugar

Preheat the oven to 180°C (top/bottom heat) and line a muffin tin with 12 baking cups. In a bowl, combine the sugar and lemon zest. Add the flour, baking powder, baking soda, poppy seeds, and salt and mix. Set the mixture aside. In a second bowl, cream the butter until light and fluffy. Then stir in the yogurt, eggs, vanilla extract, and lemon juice, one at a time. Add the dry ingredients to the second bowl and mix briefly until all ingredients are combined. Pour the batter into the muffin cups and bake for about 17 minutes (use a toothpick to test if done). Finally, combine the juice of the second lemon with the powdered sugar and spread it on the cooled muffins using a teaspoon or a brush.
