Zucchini – Carrots – Vegetables

Ingredients for 4 servings:

  • 4 zucchini
  • 6 large carrots
  • 3 cloves garlic, more if desired
  • some olive oil
  • 4 tsp soy sauce, maybe more or less
  • some salt and pepper
  • some chili powder, red
  • possibly mushrooms

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Side dish, is very quick and is healthy and delicious

Wash the zucchini, cut into approximately 1 cm thick slices, and then quarter them. Peel the carrots, slice them thinly with a vegetable peeler, and cut them into approximately 1 cm long pieces. Peel and finely dice the garlic. Place everything in a pot and add the olive oil. Cover and simmer for about 10-15 minutes, first on high, then on low heat. When the vegetables are al dente, season with soy sauce, salt, pepper, and chili. Serve immediately. You can also add mushrooms, if desired.
