Brown the ground beef with onion and garlic. Add the taco seasoning mix according to the package instructions. Season to taste with salt, pepper, paprika, and perhaps a little Tabasco. Simmer for about 20 minutes. Trim the iceberg lettuce and cut into strips. Layer the tomatoes, cucumber, and bell pepper with the other ingredients in a bowl. Pour the prepared ground beef on top. In a bowl, mix the crème fraîche, sour cream, and remoulade. Season to taste with salt, pepper, paprika, Parmesan, and herbs. Pour this mixture over the ground beef and sprinkle with the grated cheese. Press down lightly and let it sit for a few hours before serving. Then toss the salad and serve with the tacos.
