Italian bread salad

Ingredients for 3 servings:

  • e.g. olive oil
  • 1 rosemary sprig(s)
  • 100 g salami, spicy
  • ½ baguette(s), diced
  • 100 g arugula
  • 120 g cherry tomatoes
  • 20 ml balsamic vinegar, lighter
  • Sea salt and pepper
  • 50 g Parmesan, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

great for grilling

Heat a little olive oil and a sprig of rosemary in a pan. Roughly slice the salami and fry until crispy. Then transfer to crepe paper to cool. Add a little more olive oil and the diced baguette to the hot pan. Meanwhile, wash the arugula and remove the stems, and halve the cherry tomatoes. Transfer everything to a large bowl and season with vinegar, oil, sea salt, and pepper. Add the crispy, cooled bread cubes and the salami chips to the salad and mix well. Finally, stir in some grated Parmesan cheese and sprinkle the rest over the finished bread salad.
