Ingredients for 1 servings:

  • 1,000 g minced beef
  • 100 ml sauce (salsa)
  • 100 g cheese, grated
  • 3 tsp seasoning mix (taco seasoning with salt)
  • 2 peppers, green from the jar, cut into small pieces
  • 1 garlic clove(s), squeezed
  • 3 tbsp corn kernels
  • 1 handful of tacos, crumbled
  • 1 large egg(s)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 hours 30 minutes; Total time approx. 3 hours 45 minutes

Cut a piece of parchment paper so that the center covers the bottom of the crockpot and extends up to the edge on two sides. This prevents the meatloaf from sticking to the bottom and makes it easier to lift out later. Then, using the listed ingredients, make a meatball dough with your hands (avoid using a mixer if possible, as this keeps the meatloaf nice and fluffy), shape it into a loaf, and place it in the crockpot. Cover. Cook on high for about 3 1/2 hours. Serve with soft rolls, lettuce, tomatoes, green onions, salsa, sour cream, and shredded cheese.
