Sweet and sour turnips

Ingredients for 4 servings:

  • 1 turnip(s), approx. 1 kg, depending on size
  • 3 tbsp oil, neutral
  • 1 small onion(s)
  • 250 ml water
  • some salt and pepper
  • 1 tbsp caraway seeds
  • 3 tbsp vinegar, e.g. apple or white wine vinegar
  • 1 tbsp, levelled sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Quarter the turnip, peel (it works, but it’s better this way), coarsely grate it and lightly season with salt. Peel the onion and dice it very finely. Sauté the onion in a pan with the oil until translucent. Add the grated turnip and sweat for 2-3 minutes, stirring constantly. Mix the water, vinegar and sugar in a small bowl and add to the sautéed turnip. Add the caraway seeds and season with salt and pepper to taste. Simmer for 30 minutes with the lid slightly open, stirring occasionally. Also ideal for freezing. This turnip vegetable, turnip greens, goes very well with roast pork with caraway and garlic, roast pork with crackling, Bavarian roast pork, bratwurst such as Nuremberger, Thuringian etc. Potato dumplings, Schupfnudeln/Bubespitzle and fried potatoes are ideal side dishes.
