Ingredients for 6 servings:

  • 8 salted herring(s)
  • 500 g beef
  • 6 eggs
  • 20 medium-sized potatoes, waxy
  • 6 onions
  • 4 apples, Boskop or Granny Smith
  • 8 gherkins
  • 1 class jar mayonnaise of approx. 200 ml

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 1 day 3 hours; Cooking/baking time approx. 1 hour 15 minutes; Total time approx. 1 day 5 hours 45 minutes

Potato salad with salted herring and beef

Soak the salted herring fillets for a day. Boil the potatoes with their skins on and let cool. Prepare the beef as a roast beef and let cool. Hard-boil the eggs and let cool. Finely dice the potatoes, salted herring, roast beef, onions, apples, eggs, and gherkins and mix. Season with freshly ground pepper and stir in the mayonnaise.
