Ingredients for 4 servings:

  • 12 medium-sized potatoes, waxy
  • 4 herring fillets
  • 2 apples, sour
  • 1 pickled cucumber(s)
  • 1 gherkin(s) (pepper gherkin) or 6 cornichons
  • 30 g sausage (Schlackwurst) or salami, hard, cut into approx. 0.5 cm thick slices
  • 65 g roast pork or roast veal, cut into pieces approx. 0.5 cm thick
  • 1 small onion(s)
  • 2 tbsp oil, neutral in taste
  • 3 tbsp white wine vinegar or apple cider vinegar
  • 1 tsp mustard, medium hot
  • n. B. Salt
  • n. B. sugar

Instructions

Working time approx. 45 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 25 minutes; Total time approx. 13 hours 10 minutes

our Christmas Eve classic – without mayonnaise

Boil the potatoes in salted water. Peel while still hot and let them cool completely to thicken. Then cut into cubes approximately 1 cm in size. Peel and core the apples. Cut the herring, apples, both types of cucumber, roast, and sausage into half the size of the potato cubes. Peel and finely grate the onion. Combine the oil, vinegar, mustard, salt, and sugar and mix with all the finely diced ingredients. Be sure to let it sit overnight and season again before serving.
