Ingredients for 4 servings:
- 1 kg roast beef (rump or brisket)
- 1 onion(s), diced
- 150 g bacon, diced
- 150 g bread(s) (brown bread, e.g. rye bread)
- ¾ liter broth
- 100 g block chocolate
- salt and pepper
- 1 tbsp butter
- 3 tbsp olive oil
Instructions
Working time approx. 35 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 5 minutes
Roughly dice the black bread. Heat the butter and sauté it with the diced onion and bacon. Stir in the bread cubes and let everything cool. Season the meat with salt and pepper. Cut a pocket into the meat. Fill with the bread, bacon, and onion mixture, then seal the pocket. Heat the oil in a pan and sear the meat on all sides. Pour in the stock and cook in a covered pan on the stovetop over medium heat for about 90 minutes, turning the meat occasionally. Once the cooking time is over, remove the meat from the pan. Dissolve the chocolate in the sauce. Season with salt and pepper if desired. Serve with red cabbage and boiled dumplings.
