American fast food classic in puff pastry

Mix all the ingredients for the sauce and let it sit in the fridge for a while. Brown the minced meat in a pan until crumbly and season with salt and pepper. Peel the onion and slice into rings. Slice the cucumber. Preheat oven to 180°C (top/bottom heat). Roll out the puff pastry and spread the sauce lengthwise in the middle of the pastry. Spread the minced meat, onion rings, gherkins, and cheese on top, leaving a third of the pastry free on each side. Cut the loose pastry into strips on both sides and fold them across the filling. Brush with egg yolk and bake for about 20 minutes. Serve with iceberg lettuce with vinegar, oil, and plenty of onion.
