Parsnip sesame balls

Ingredients for 4 servings:

  • 200 g parsnip(s)
  • 200 g cream cheese
  • 1 egg(s)
  • 30 g breadcrumbs
  • 40 g Parmesan, freshly grated
  • 60 g sesame seeds
  • salt and pepper
  • nutmeg
  • Clove powder

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the parsnips and coarsely grate them. Finely grate the Parmesan cheese. Mix the mixture with the egg, cream cheese, and breadcrumbs, then season with pepper, a little salt, nutmeg, and a pinch of clove powder. Form this mixture into balls, roughly the size of ping-pong balls, and roll them in the sesame seeds. Place the balls on a baking sheet lined with baking paper and bake on the middle shelf at 200°C (convection oven) for 20 to 25 minutes, until they are lightly browned and rise slightly. The balls are a good side dish, but they can also be eaten with a sauce, for example, as an appetizer or served as part of a buffet. You can vary the quantities and seasonings somewhat; this amount will yield 12-15 balls. It’s important that the balls can be easily formed into a stable ball, but that the sesame seeds stick to the surface. They’re delicious both hot and cold. Experience has shown that it’s worth making a few extra balls, as they still taste great the next day.
