Quick mini quiches with chanterelles

Ingredients for 4 servings:

  • 1 bowl of chanterelles, fresh
  • 100 g bacon cubes
  • 1 onion(s)
  • 1 tbsp flour for dusting
  • 1 cup of cream
  • 100 ml milk
  • 3 eggs
  • 1 pack of quiche and tart dough from the refrigerated section
  • 1 pinch of nutmeg
  • 1 tbsp vegetable stock powder
  • 100 g cheese, grated
  • Butter for the mold
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 55 minutes

First, clean the chanterelles, wash them thoroughly, and drain them. Chop the chanterelles into small pieces, peel the onion, and finely dice them. Sauté them with the bacon in a little oil in a pan. Season with salt and pepper and dust with flour. Let cool briefly. For the topping, mix the cream, milk, granulated stock, nutmeg, and eggs and season with salt and pepper. Grease a 12-hole muffin tin with butter. Cut the quiche dough to size and press it into the muffin tin. Fill with the chanterelles, spread the topping over it, and sprinkle with cheese. Bake at 180°C in a preheated oven with fan for about 20-25 minutes. Let cool briefly, then the mini quiches will be easier to remove from the tin. Serve with a green salad.
