Ingredients for 2 servings:
- 4 sausages, fresh, coarse
- 4 cheeses (Babybel) or equivalent amount of other cheese
- 100 g bacon, cut into strips
- 3 tbsp onion(s), fried onions or home-pickled red onions
- 1 garlic clove(s)
- 1 tbsp Jalapeño(s), sliced
- e.g. salt and pepper
- some oil
- Fat for the mold
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
First, chop the onions, garlic, and jalapeño slices very finely. Tips: Not necessary for fried onions. I used pickled red onions myself. You can also use raw white or red onions, but these should be sautéed in a little fat first. Now remove the sausage meat from the skin and discard the skin. Place the sausage meat and the chopped ingredients in a bowl and knead everything thoroughly – either with wet hands or disposable gloves, as the sausage meat is very sticky. Spread the mixture out on a lightly oiled plate and press it flat. Add the Babybel (or cheese of your choice), which has been removed from the red rind in the meantime. Carefully roll everything up and press the edges together firmly to prevent the cheese from seeping out. Next, wrap the bacon strip by strip in a spiral around the rolled sausage meat and place it in a lightly greased baking dish. Place the dish in the oven at approximately 200°C (convection oven) for about 30-45 minutes. Once the bacon is nice and crispy, our roll is ready! You can eat it as it is or serve it with anything you like as a side dish. It goes well with fries, herb or garlic baguette, or a mixed salad. Tip: You can also divide the sausage meat mixture into portions, wrap each piece of cheese in it, and wrap each piece in bacon. This makes delicious finger food for buffets, parties, etc.
