Spinach quiche with wild garlic and feta cheese base

Ingredients for 4 servings:

  • 1 pc. puff pastry (ready-made round base)
  • 150 g sheep’s cheese
  • 150 g cream cheese
  • 2 tbsp wild garlic, fresh, chopped
  • 1 tbsp milk
  • 200 g cooked ham, diced (omit in the vegetarian version)
  • 450 g leaf spinach, frozen, chopped
  • 4 eggs, whole
  • 1 pinch(s) of salt and pepper
  • 100 g Emmental cheese, grated
  • nutmeg

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes

Line a quiche dish with the puff pastry base and pierce with a fork. Combine the feta cheese, cream cheese, and wild garlic with a little milk until stiff, season to taste, and spread evenly over the puff pastry base. Sprinkle the diced ham over the top and press down lightly. Whisk the eggs, stir in the thawed spinach, and season to taste. Then pour the mixture into the quiche dish over the feta cheese and ham. Sprinkle with grated Emmental cheese and bake in the oven at 160°C (fan oven) for about 40 minutes. Tip: This quiche is also perfect for vegetarians—just omit the ham.
