Classic potato salad with hot mustard

Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 2 onions, white
  • 1 sprig lovage
  • 1 tsp mustard, hot
  • 6 tbsp fruit vinegar
  • 6 tbsp sunflower oil
  • Salt and pepper, black

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Cook the unpeeled potatoes until al dente. Meanwhile, dice the onions and place them in a sieve in boiling water for one minute. Combine the sautéed onions with the finely chopped lovage, spicy mustard, and fruit vinegar, along with a pinch of salt. Then stir in the sunflower oil a spoonful at a time. Once cooled, peel the cooked potatoes and slice them into a bowl, seasoning each layer with a little salt and pepper. Mix the dressing with the potatoes and let stand for two hours.
