Crispy potato salad

Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 1 bunch of radishes
  • 1 cucumber(s)
  • 1 onion(s), red
  • 1 bunch of chives
  • 6 tbsp vinegar (herb vinegar)
  • salt and pepper
  • 1 tsp sugar
  • 4 tbsp oil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Boil the potatoes, let them cool, and peel them. Slice the radishes. Halve the cucumber lengthwise and slice them. Finely dice the onions. Slice the chives. Mix the vinegar with salt, pepper, and sugar. Stir in the oil, add the diced onion and chives. Slice the potatoes and toss with the vinaigrette. Add the radishes and cucumber slices, cover, and let stand for about 30 minutes. Season the salad again to taste and serve.
