Ingredients for 3 servings:

  • 200 g spirali, colorful
  • 200 g cherry tomatoes
  • 1 small avocado(s)
  • 2 eggs
  • e.g. olive oil
  • Balsamic vinegar, light
  • 1 tsp, heaped mustard, medium hot
  • ½ lemon(s), juice
  • some lemon zest, if desired
  • lots of herbs (parsley, chives, basil), chopped
  • 1 tsp, heaped chili powder

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes

Cook the spirelli in salted water according to the package instructions, drain, rinse, and let cool thoroughly. Meanwhile, wash and halve the cherry tomatoes. Halve the avocado, remove the pit, scoop out the flesh, and cut into small pieces. Peel the eggs and cut into small pieces. Mix together the olive oil, balsamic vinegar, mustard, herbs, lemon juice, and a little grated zest, if desired, along with chili powder. Mix the pasta, tomatoes, eggs, and avocado thoroughly with the dressing and let the salad sit in the refrigerator for 1 hour.
