Variation with sheep’s cheese, simple and vegetarian

Halve the avocado lengthwise and remove the stone. Scoop out the flesh, being careful not to damage the skin. Place the flesh in a bowl with salt, pepper, and lime juice, mashing it with a fork. Then cut the feta cheese into small cubes and fold in, reserving a few cubes to the side for topping. Spoon everything into the two avocado shells and scatter the remaining feta cheese cubes on top. Season with pepper again, if desired. Place on the hot grill for about 5-7 minutes. About 4 minutes of this should be on direct heat, followed by indirect heat. The feta cheese can be replaced with tomatoes, or simply omitted.
