Roast beef in beer sauce

Ingredients for 4 servings:

  • 1 kg beef
  • 3 tbsp tomato paste
  • salt and pepper
  • 2 onions, finely diced
  • 3 garlic cloves, finely chopped
  • 2 carrots, diced
  • 1 tbsp oil
  • 2 bay leaves
  • 1 tbsp white wine vinegar
  • ½ liter beer, light
  • ½ tsp sugar
  • Sauce thickener

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

Season the meat with salt and pepper and sear on all sides in hot oil. Remove from the pan. Sauté the garlic, onions, and carrots. Deglaze with beer and add tomato paste. Return the meat to the roasting pan and add the vinegar, sugar, bay leaves, salt, and plenty of pepper. Bring to a boil, then cover and simmer over low heat for 2 hours. Remove the roast from the pan and strain the liquid through a sieve. Thicken with a gravy thickener. Season again with salt and pepper to taste.
