Maultaschen with quark filling

Ingredients for 3 servings:

  • 1 cup flour
  • 1 m.-sized egg(s)
  • 1 m.-sized egg white
  • e.g. milk
  • Flour
  • ½ tsp salt
  • 1 cup of curd
  • 1 medium egg yolk
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Put a cup of flour and the salt into a bowl, then put the whole egg and egg white into a cup and fill it with milk. Add this to the flour and salt mixture and stir until smooth. Then add enough flour to form a supple, smooth dough that can be rolled out. For the filling, mix the quark, egg yolk, and spices. Cut out circles (approx. 10 cm in diameter) from the rolled-out dough, fill them with the quark, fold them in half, and press them down firmly. Cook them in simmering salted water for about 10 minutes. Serve with a béchamel sauce or a bacon and cream sauce.
