Ingredients for 4 servings:

  • 6 beef schnitzels
  • 1 onion(s)
  • 1 liter beef broth
  • 2 cloves garlic
  • 1 tbsp mustard
  • butter
  • oil
  • Flour
  • potato starch
  • Salt
  • pepper

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 1 hour 50 minutes

traditional, delicate and tasteful

Pound the beef schnitzels, make several cuts along the edges, and flour both sides. Heat oil in a non-stick pan, sear the schnitzels on both sides, remove from the pan, and transfer to an ovenproof dish. Season with salt and pepper and keep warm. Add a little butter and onion to the roasting residue in the pan and sauté the onion until translucent. Add the garlic and fry. Pour in the beef broth, add the mustard, and reduce slightly. Pour the sauce over the beef schnitzels, cover, and simmer in the oven at 170°C (top/bottom heat) until soft. Thicken with potato starch if desired. This goes well with pasta, croquettes, rice, and pear with cranberries.
