Ingredients for 2 servings:
- 350 g Brussels sprouts
- 1 m.-sized onion(s)
- 125 g feta cheese
- 3 tbsp sunflower seeds, roasted
- 5 tbsp olive oil
- 3 tbsp fruit vinegar, e.g. pear vinegar
- salt and pepper
- chili powder
- 1 tsp vegetable broth
Instructions
Working time approx. 15 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 10 minutes; Total time approx. 5 hours 25 minutes
Peel the Brussels sprouts, peel the onion, and roughly chop it. Season the cooking water with the broth and simmer the Brussels sprouts and onion for 10 minutes. Drain the vegetables and let them cool. Then toss everything with the crumbled feta cheese, sunflower seeds, oil, vinegar, and seasonings. Let the salad marinate for a good 5 hours or more.
