Fiery zucchini chutney

Ingredients for 8 servings:

  • 1 kg zucchini, preferably mixed, yellow and green
  • 500 g onion(s)
  • 2 large chili peppers, red, fresh (or 3)
  • 1 piece(s) ginger, thumb-sized
  • 2 garlic cloves
  • 2 bell peppers, red
  • 2 tbsp spice mix (garam masala)
  • 2 tbsp mustard powder
  • 2 tbsp curry powder
  • 300 ml vinegar (white wine or apple cider vinegar)
  • 150 g brown sugar
  • 1 tbsp salt
  • 1 lemon(s) (organic), the grated peel and the juice

Working time approx. 30 minutes; Total time approx. 30 minutes

good against the zucchini glut

Dice the zucchini, onions, and bell peppers (I use a Nicer Dicer; it’s very quick). Finely dice the chili, ginger, and garlic. Place everything in a large pot and sauté, then add the spices, vinegar, and sugar. Stir everything together and simmer until the liquid has almost evaporated. Stir in the grated lemon zest and lemon juice, season to taste, and ladle into rinsed jars while still very hot. Makes about 8 jars.
