Ingredients for 2 servings:
- 2 avocados
- ¼ mango(s)
- 100 g sheep’s cheese
- 1 tsp lemon oil, oa
- 1 tsp sesame oil, oa
- salt and pepper
- e.g. arugula or coriander, fresh, finely chopped

Halve the avocados, being careful not to damage the skins. Remove the pit. Carefully scoop out the flesh with a teaspoon and then cut into pieces. Reserve the halves. Peel the mango and cut 1/4 into small pieces, depending on your preference. Cut the feta cheese into small pieces, about half a cheese for two avocados, depending on your preference. Preheat the oven to 150°C. Mix the avocado, feta cheese, and mango pieces in a bowl with the oil, pepper, and salt. Optionally, add chopped fresh arugula or cilantro. Pile the mixture into the avocado halves. You can, of course, also use baking cups. Bake everything in the oven for about 10-12 minutes. Note that every oven is different, so it’s best to keep the temperature lower, as the avocado skins can dry out easily and the dish will then taste a bit smoky, which I personally don’t like. If you don’t want to take the risk, you can also use baking tins. This way, you can bake the feta cheese until it’s a little golden brown. Tip: It can also be served cold.
