Ingredients for 1 servings:

  • 200 g flour
  • 1 tsp, heaped baking powder
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 100 g butter
  • 1 m.-sized egg(s)
  • 800 g strawberries
  • 500 g kefir
  • 10 sheets of gelatin
  • 200 g cream
  • 100 g sugar
  • 1 packet of vanilla sugar
  • 1 lemon(s), juice
  • chocolate sprinkles
  • some biscuits (Mikado sticks)

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 5 hours; Cooking/baking time approx. 15 minutes; Total time approx. 6 hours 45 minutes

Strawberry kefir cake

Knead the dough ingredients into crumbles. Pour into a 26cm springform pan and press down firmly. Bake at 180°C fan-assisted oven for 15 minutes. Allow the base to cool thoroughly and then place the cake ring around it. Hull the strawberries. Sort out about 200g of small strawberries for the glaze and set aside a few for decoration. For the edge, halve the prettiest strawberries and place them on top. Spread the rest whole on the base. Whip the cream with the vanilla sugar and chill. Soak 7 sheets of gelatin. Mix 300g kefir, 80g sugar, and lemon juice. Squeeze out the gelatin and dissolve it. Mix some of the kefir mixture with the dissolved gelatin to equalize the temperature. Then stir this into the kefir mixture and fold in the cream. Spread the cream over the strawberries and chill. Soak 3 sheets of gelatin. Purée the remaining strawberries with the kefir and sugar. Squeeze out the gelatin, dissolve it, and stir it into the strawberry mixture. Spread the glaze over the kefir cream. Refrigerate for 5 hours. Garnish with strawberries, chocolate sprinkles, and Mikado sticks.
