Ingredients for 4 servings:
- 1 kg pork breast (thick rib)
- 2 tbsp rapeseed oil
- 4 thick onions, diced
- 1 carrot(s), peeled and diced
- 2 garlic cloves, squeezed
- 2 tbsp tomato paste
- 1 tbsp mustard, medium hot
- 500 ml vegetable stock
- 50 ml sherry
- 1 bay leaf
- salt and pepper
- Paprika powder
- 1 tbsp soy sauce
- 1 tbsp beetroot
- some rosemary
- some thyme
- some caraway powder
- some cornstarch mixed with water

Brown the meat on all sides in a large pot or roasting pan in the heated oil. Add the onions, garlic, carrots, and tomato paste and sweat briefly. Add all the seasonings, along with a little stock and sherry, and simmer over low heat for about 90 minutes. Add a little more liquid occasionally. Once the meat is cooked, thicken the sauce with cornstarch and season to taste. We like to serve it with sauerkraut and dumplings or potatoes.
