Ingredients for 2 servings:
- 2 rye rolls
- 3 chicken schnitzels (minute schnitzels)
- 1 tomato(s)
- 1 small zucchini
- olive oil
- salt and pepper
- Spice mix (poultry spice)
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Season the chicken schnitzels well on both sides with salt and poultry seasoning. Briefly sear the schnitzels in olive oil on both sides and then return them to the preheated oven at 130°C for another 10 minutes. Meanwhile, slice the zucchini and fry them in a pan with olive oil, seasoning both sides lightly with salt. Thinly slice the tomato. Cut open the bread rolls, top each side with tomatoes, then zucchini. Cut the chicken schnitzels into strips and place them on top of the zucchini.
