Ingredients for 1 servings:
- n. B. Butter for the tray
- 20 apricots
- 250 g flour
- 240 g sugar
- 1 tsp, heaped baking powder
- 1 packet of vanilla sugar
- 5 tsp Bourbon vanilla powder from the mill
- 1 pinch of salt
- 250 g butter, soft
- 4 m.-sized eggs
- 80 ml milk
- 2 tbsp powdered sugar for sprinkling, approx.

Grease a baking tray. Wash, dry, and halve the apricots. Sift the flour, sugar, baking powder, vanilla sugar, bourbon vanilla, and salt into a bowl and make a well in the center. Add the softened butter to this well. Whisk the eggs with the milk. Pour the egg wash onto the butter. Mix everything together with the flour and sugar for about 3 minutes until you have a smooth batter. Pour the batter onto the baking tray and spread it evenly. Arrange the apricots evenly on the batter, cut-side up, and press them lightly into the batter. Bake the cake in a preheated oven at 160°C (top/bottom heat) for 40 minutes, dusting with icing sugar halfway through. Let it cool, divide it, arrange it on the plate, and serve.
